Delicious curries, such as Kari Ayam (Chicken Curry) are a favourite food wherever Straits Chinese people settled. You’ll find variations of this dish, being enjoyed with crusty bread or rice, throughout Peninsular Malaysia and Singapore.

There are many different curry pastes, but this REMPAHS paste captures the classic heritage flavours that have made the dish such a favourite. The heady aroma is a nostalgic journey into the history of food in the region, bringing back childhood memories of rich curries enjoyed at much-loved coffee shops and restaurants.

You’ll need:

500g chicken, beef, mutton or mock meat
4 medium potatoes
200ml coconut milk
300ml water

This paste is a blend of soybean oil, sugar, salt, dried chilli, shallots, tumeric, lemongrass, galangal.
